Wynn Las Vegas and Encore

Steve Weitman is the Chief Operating Officer at Wynn Las Vegas and Encore, overseeing retail, food and beverage, hotel, engineering and security. The recipient of more Forbes five-star awards than any other independent hotel company in the world, Wynn’s unparalleled standards for excellence has made it the most recognized luxury resort in Las Vegas.

Previously serving as Senior Vice President of Food and Beverage, Weitman provided strategic direction and oversight for 22 dining experiences in Wynn’s expansive food and beverage portfolio. His oversight also included the resort’s vast catering and banquet operation which serves more than 850,000 guests per year, a 24-hour in-room dining program and a collective team of 4,000 employees.   

Earning his degree from Ithaca College, Weitman graduated with a Bachelor of Science in Accounting before furthering his studies at Cornell University where he received a Masters of Professional Studies with a concentration in Entrepreneurship and Food and Beverage.

Prior to joining Wynn Las Vegas in 2004, Weitman spent nearly nine years at Disney Regional Entertainment, a division of the Walt Disney Company. His concluding role with the corporation was Director of Field Support Center Operations and Licensing, overseeing all facets of business development for the division including identifying licensing and franchising opportunities, negotiating contracts and developing new strategic growth plans. Previously, he served as the Director of Operations for ESPN Zone where he was responsible for day-to-day operations and 2,000 employees. 

Additional roles have included the Director of Operations and Finance for Club Disney, Vice President of Operations at Wondercamp Entertainment Co. and Senior Auditor at Arthur Andersen and Company.  

In the community, Weitman has served as a key collaborator in the revitalization of The Shade Tree Shelter which provides safe shelter to homeless and abused women and children in crisis; as well as offers life-changing services that promote stability, dignity and self-reliance. Playing an integral role in the project, he procured various community partners which have donated essential items to the shelter. 

Weitman has also served as an executive board member for the Nevada Restaurant Association, board of trustees for the Culinary Academy of Las Vegas and is a graduate of the FBI Citizens Academy, an elite program designed to foster a greater understanding of the role of federal law enforcement in the community. In 2015, he was honored with the “Mastership Award” from the Las Vegas Business Academy and in 2017 he was named “One of the 25 People to Watch” by Global Gaming Business Magazine.
